Sesame Beef Bowls Built for Meal Prep

Sesame Beef Bowls Built for Meal Prep

A good meal-prep bowl should still taste like dinner on day two, not a collection of tired leftovers. Here, browned beef and a punchy sesame-soy sauce do most of the work, while crisp vegetables keep the bowls fresh. Plan on four servings, 15 minutes of prep, and about 15 minutes at the stove.

Set up the bowl components

Start with 1 pound lean ground beef, 3 cups cooked rice, 1 cucumber, 2 carrots, and 2 sliced green onions. For the sauce, whisk together 2 tablespoons low-sodium soy sauce, 1 tablespoon rice vinegar, 1 tablespoon honey, 1 teaspoon sesame oil, and 1 teaspoon grated fresh ginger. Sesame seeds are an easy finish, but the bowls work without them.

Brown the beef well

Heat a large skillet over medium-high heat and add the beef, breaking it into small pieces as it cooks. Let it brown rather than stirring constantly, then cook until no pink remains, about 7–9 minutes. Drain excess fat if needed, pour in the sauce, and stir for 1–2 minutes until it coats the beef.

Slice the cucumber and cut the carrots into matchsticks while the beef cooks. Divide the rice among four bowls, then add the beef, cucumber, carrots, and green onions. Sprinkle with sesame seeds if you like a little crunch.

Pack for the week

For packed lunches, store the beef and rice together and keep the cucumber and sauce separate until serving; the cucumber stays crisper that way. Each bowl has approximately 30 grams of protein, with the exact amount depending on the beef and rice portions. Nutrition values are estimates, so use your ingredient labels if you need a more precise figure.
